HEARTY WHITE CHICKEN CHILI

I always say... my favorite recipes are QUICK, EASY, & HEALTHY. Even better when it involves a slow cooker... assemble & let it cook. Can't get much easier than that!


This is a fresh take on a classic... chili. Full of protein & lots of yummy spices!


Ingredients:

1 lb boneless, skinless chicken breasts

1 can (15 oz) white beans, drained & rinsed

1 can (15 oz) diced tomatoes with green chilies

1 cup chicken broth

1 onion, chopped

2 cloves garlic, minced

1 tsp ground cumin

1 tsp smoked paprika

1/2 tsp dried oregano

S & P to taste

1/2 cup fresh parsley, chopped (garnish)

juice of 1 lime

feta cheese, crumbled


Directions:

Place the chicken breasts at the bottom of the slow cooker.

Add white beans, diced tomatoes, chicken broth, onion, garlic, cumin, smoked paprika, oregano, S & P on top of chicken.

Stir gently to combine ingredients, ensuring chicken is covered with mixture.

Cover & cook on low 6-7 hours or on high 3-4 hours, until chicken is cooked through & tender.

Once cooked, remove chicken from slow cooker & shred it using 2 forks.

Return chicken to slow cooker & stir to combine.

Add lime juice & adjust seasoning if necessary.

Serve hot, garnished with parsley & crumbled feta.
