AN EASY MAKE-AHEAD-GO-TO RECIPE

When I am considering meal options, I look for 3 things:

1- Easy

2- Fast

3- Healthy


This is one of my favorites!


Why I love it:

  • It's a simple recipe that can be made in advance... think food prep (easy).

  • It stays fresh in the fridge for several days & can be eaten for lunch, dinner, or as a snack (fast).

  • It's full of veggies & protein (healthy).


Chickpea Mediterranean Salad:

1 cup chickpeas (I use a whole can)

1 cup kidney beans (I use a whole can)

1 orange bell pepper (or red or yellow)

1 cucumber

2 tomatoes (or a hand full of cherry tomatoes)


Sprinkle with:

parsley, mint, oregano

lemon juice

olive oil

sea salt

all to taste


When serving, I add crumbled feta.


This is so yummy! Feel free to add more veggies or other types of beans to your liking.
