Flip that Recipe

‘Flip that Recipe’ is what I have named the process of taking your favorite recipe & flipping it’ into a healthier version.

So you can still enjoy your favorites without the guilt…

Those items in the recipe that are marked through have been replaced with a (healthier version).

Here is one of my (and my husband’s) favorites!


BAKED CHIMICHANGAS:

1 lb. lean ground beef (lean ground turkey)

1 (4oz) can diced green chiles

1 (8oz) can tomato sauce (use low/no sodium version)

1 package taco seasoning (homemade taco seasoning- recipe below)

1 (15oz) can black beans, drained & rinsed (use low/no sodium version)

4 burrito-sized tortillas (Extreme Wellness brand Spinach & Herb tortilla wraps OR whole wheat wraps)

1 cup shredded cheddar cheese

1 Tbsp olive oil


Salsa (optional)

1 cup cherry tomatoes, halved

1 avocado, diced

¼ cup fresh cilantro, chopped

Juice of one lime


DIRECTIONS:

Preheat oven to 425* F. Line a baking sheet with foil & grease. Combine all salsa ingredietns in a bowl & refrigerate until serving.

 

In large sauté pan, brown turkey until cooked through. Drain excess grease. Add chiles, tomato sauce, taco seasoning, & beans. Reduce heat to medium-low & simmer for 5 minutes.

 

Evenly divide meat & cheese between tortillas (NOTE: this recipe calls for only 4 tortillas, but I make 6-8 servings with this recipe). Fold tortillas and lay seam-side down on baking sheet. Brush tops with oil. Bake 15-18 minutes.

 

HOMEMADE TACO SEASONING:

(Recipe equivalent to 1 packet of pre-made seasoning)

1 Tbsp chili powder

1 ½ tsp ground cumin

1 tsp sea salt

1 tsp black pepper

½ tsp paprika

¼ tsp garlic powder

¼ tsp onion powder

¼ tsp crushed red pepper flakes

¼ tsp dried oregano
